Production began in 2009, initially with 60,000 proofs of pure alcohol per year. Following Diageo's investment in the distillery, the facility was expanded and output increased to 750,000 proofs of pure alcohol per year. Stauning malts the rye for production and occasionally uses peat and heather for kilning. Stauning Rye matured for an unspecified period in
