Because of the dark pigmentation of the skins, even minimal skin contact with the must will result in a substantial darker ros than is the norm. The organically grown grapes are hand harvested in small baskets in late September or Early October, depending on the year. The type of vintage will also decide whether the grapes are left to macerate a few hours on their skins
