Domaine Olivier Morin Bourgogne Aligoté, 2022 drezzy Paul Filliatreau's stylistic shift toThis wine is made of 100% Aligot. The soils are kimmeridgian limestone, exactly like the terroir in Chablis. The grapes are direct pressed, fermented in stainless steel, and aged on the lees for one year. Deliciously fruity and textured with notes of ruby grapefruit, nectarine, green apple, and hints of saline minerality. The perfect apertif to pair with oysters or hamachi crudo with a mint yuzu dressing.
