Bénédicte et Stéphane Tissot 'Singulier' Arbois Trousseau, 2023 (1.5L) jose pastor this wine spent around 30100% hand de stemmed Trousseau, without any punch down for the first two weeks of maceration. It is vinified in an open top wooden fermenter, so as to extract less and infuse the wine more gently. Aged for one year in barrel. A delicate and light version of the sometimes 'feral' Trousseau. Pair with roasted chicken thighs and summer veggies.
