Stephanie Lucas 'Papillon d'Orphee' Côtes du Tarn, 2021 sweetwater In the early 1900's100% Braucol (aka Fer Servadou) from a parcel planted in soils rich with clay, limestone, and gravel which is then pressed after 12 days of maceration, fermented with native yeasts, and aged for 10 months in stainless steel tanks with just 11 ppm of sulfur added at bottling. It showcases crunchy red fruit, licorice, very light tannins, and overall is very clean. Pair it with some hard cheeses and cured meats or with a savory tangy eggplant caponata.
